SLOW COOKED Peach Cobbler Oatmeal
I am a person who loves placing everything in one pot and letting it go to do its' thing. No fuss is where I want to live. This recipe is so easy and versatile (you can switch up the fruits) that you will be able to try something different every week.
1 quart size bag of frozen peaches
1 1/2 - 2 quarts apple juice
3-4 cups water
1 tsp nutmeg
1 Tbsp cinnamon
1 Cup Pure Cain brown sugar
4 Cups rolled oats (depending on how thick you want you oatmeal)
2 Tbsp Earth Balance BUTTER (Optional)
Place all ingredients into a slow cooker/crockpot. Stir really well until you see that everything is pretty much like a soup. Give it a taste to see if you are happy with the flavor (sweet enough or too much). Then place lid on crock pot, one that seals preferably, and turn your pot on to cook for 6 hr. Let it cook over night for a nice hardy breakfast in the morning!
Add nuts, other grains, berries and nut milk to turn it up a notch.
