Chickpea Blondie Brownies

If you are looking for an alternative to flour or dairy products to make a luscious and decadent brownie, this is it!


Cooking Spray

1 Can          Chickpeas, (drained and rinsed)

1/2 Cup       almond or peanut butter

1/2 Cup       pure maple syrup or honey

2 tsp           vanilla extract

1/2 tsp        salt

1/4 tsp        baking powder

1/4 tsp        baking soda

1/3 Cup      chocolate (vegan or regular) chips


Preheat oven to 350 degrees F. Prepare a non-stick pan and set to the side.

Using a food processor, add all ingredients (without chocolate chips) and blend until it comes out smooth. Add in 1/3 cup of chocolate pieces (optional). Place the batter in your non-stick prepared pan evenly, and if you like, sprinkle more chips over the top.

Bake in the over for 20-25 min. Check is they are done with a tooth pick, and if it comes out clean, they are ready. The goal is for them not to be dry, but a little moist is ok.

Once done, remove from the oven and let sit for about 20 min. This should yield about 14 blondies. Should keep for 3-5 days.
